2014 Severn River Shiraz Viognier
DFS EXCLUSIVE
NOSE: A young, elegant Shiraz Viognier blend showing redcurrants, cherries, plums and orange blossom Turkish Delight notes, with soft vanillin oak.
PALATE: Sourced from Blocks 3 and 26 from Seven Scenes Vineyard, this is a distinctive Granite Belt cool climate Syrah style; very delicate, with varietal characters of intense cherries and plum, a touch of white pepper, and lovely hints of apricot and oranges from the Viognier. Firm tannins, good intensity with balanced supporting French and American oak.
WINEMAKING COMMENTS:
2014 was a good year for Shiraz, picked alongside small handselected parcels of Viognier to create a regional blend that works well in our Granite Belt vineyards. We used a cold soak method on the Shiraz with 5% ripe Viognier fruit added to the crushed red fruit pre-fermentation. Cool fermented with both wild and cultured yeasts, then aged in oak barriques for 12 months.
FOOD MATCH SUGGESTION:
Enjoy with pan-fried pork fillet finished off in the oven with ripe apple and truffle jus with wild mushroom risotto
