WINEMAKING COMMENTS: In contrast to the Vineyard Selection Verdelho which was featured in the recent Autumn case, for this premium small-batch wine, we put aside a parcel of the best fruit to be crushed separately. For this version, we thought we’d bring just a touch of oak into the picture, with a portion of the blend being wild-fermented in fragrant French oak barriques. The oak gives a subtle creamy texture and richness to the tropical fruit notes as well as a touch of vanilla and spice to the aroma. The balance of the juice was fermented as usual in stainless steel to retain all the fresh pure avours that Verdelho is knowned for. We then blended and allowed all the characters to integrate slowly into a seamless whole, before bottling just before Christmas. This slightly left- eld style of Verdelho is drinking beautifully now, and is a perfect white wine for the cooler weather.
