COLOUR: Rich ruby with garnet edges.
NOSE: Array of prunes, mocha, fruitcake, cinnamon and clove with hints of cigar box.
PALATE: A medium dry sparkling wine with persistent fine-medium bead and creamy mousse. A lovely balanced palate of baked fig, dark plum, rich fruitcake and fine grained tannins with warm baking spice and a touch of sweetness from the fortified component.
A unique style, using a lightly oaked and tank-aged Merlot and Cabernet blend, that has been given the luxurious addition of a small amount of tawny style barrel aged fortified wine. The result is a celebratory sparkling wine that evokes the aromas and tastes of family festivities with luscious stewed dark fruits, mocha, chocolate and warm spices.
Wonderful with sharp, crumbly aged Cheddar.
