2016 Private Collection Late Harvest

COLOUR: Deep amber-gold
NOSE: Dried apricot, honeyed nectarine, with floral notes of honeysuckle and orange blossom.
PALATE: An intense, perfumed style of late harvest sweet white wine, Rich, ripe William pear and peach compote with luscious candied cumquat marmalade, toffee and exotic notes of lavender and sweet musk. Fine citrus acidity gives length and persistence on the palate.
WINEMAKING COMMENTS:
An unusually warm and dry 2 week period in late February allowed the sun-drenched north facing blocks of our Night Sky vineyard to produce some stunning late harvest Pinot Gris grapes. The unusual deep amber colour of the resulting wine is a reflection of the deep pink-purple colour of the late harvested fruit. Made in the typical French Alsatian style, this wine has beautifully balanced luscious natural sugars with bright crisp acidity and long-term ageing potential. The grapes were picked at 16.5 Baumé, fermentation is carried out in stainless steel tanks and is stopped when acidity, alcohol and sugar are perfectly synchronised.
