REGION: Granite Belt, Australia
COLOUR: Rich ruby red, with violet tones
NOSE: An elegant Shiraz Viognier blend with notes of Turkish delight, black olive, rhubarb, spiced plums, cocoa and vanilla.
PALATE: A distinctive Granite Belt cool climate Syrah, with varietal characters of intense red & black plums, rhubarb, forest floor fruits and lovely hints of apricot from the Viognier. Bold but elegant tannins with balanced supporting French and American oak.
2016 was a cooler year for Shiraz with a good amount of sunshine and no extreme weather occurrences. We used a cold soak method on the Shiraz and cool fermented with 50% wild and 50% cultured yeasts, before ageing in mix of French and America oak barriques for 14 months.
FOOD MATCH SUGGESTION:
Enjoy with pan-fried pork fillet finished off in the oven with ripe apple and truffle jus with wild mushroom risotto.
