NOSE: A lifted aroma of creamy apple, soft intense cashew nut paste and background citrus tones.
PALATE: A medium-bodied sparkling,with fresh crisp flavour and balanced acidity, excellent mouthfeel in a brut style with low dosage. Nutty, creamy yeasty notes, with a touch of lime essence, green apple, and vegemite from extended ageing on lees.
WINEMAKING COMMENTS: Made in the hand-crafted methode traditionnelle style, the 2010 vintage shows great texture, elegant richness and aged lees notes, sitting above pristine, fresh fruit. 2010 was a cool to medium ripening season with good tight flavours. Release of this wine is delayed until the wine has achieved a full five years ageing over yeast lees in the bottle before disgorgement.
