Long maturation in old French oak adds oxidative notes of butterscotch and walnuts.\u003cbr data-mce-fragment=\"1\"\u003eMaking a NV Tawny fortified style is a labour of love and an investment in the future. At Sirromet we use a modified solera system where we periodically re-blend all our fortified barrels to tank, prepare a small batch for bottling, then add fresh new vintage wine to the rest of the reserve batch before returning to barrel for further ageing.
