Description
REGION:Â Granite Belt, Queensland.
COLOUR: Rich, burgundy red.
NOSE: An intense perfume of violets, cassis, plum and blackberry.
PALATE: Cabernet Sauvignon and friends - expressive Cabernet's intense cassis and fine tannin offers structure and elegance to the plush, plummy softness of Merlot. Just a dash of dark and brooding Petit Verdot with spice and chocolate tones completes this classic blend.
WINEMAKING COMMENTS: 2019 vintage was one of the best on record for red wines on the Granite Belt. It was a drought year however, so yields were definitely down with flavour and concentration up. This wine is still very youthful, reflecting the power and concentration of this vintage. Fruit flavours are still very fresh and bright and are yet to progress to cooked or dried fruit flavours. This indicates this wine has a long cellaring potential, but is also good to drink now. We produced some of the best Merlot we have had in years in 2019 - so we decided to go with a Cabernet / Merlot blend.
All varietals were fermented and oak matured separately before the best individual barrels were carefully selected for blending. Merlot tends to compliments Cabernet by adding plush texture and more mid-palate weight to soften the tannins of Cabernet. All these varietals are traditional Bordeaux varietals often used for blending in Bordeaux. It has been a tradition in some regions to name such Bordeaux blends "Cabernets". We aren't allowed to call them "Bordeaux Blends" due to French region name protections.
In this context, "Cabernets" means "Cabernet Sauvignon and Friends".
FOOD MATCHING: Enjoy with chargrilled beef fillet, potato gratin, seasonal greens, truffle butter and jus.
