NOSE: White & yellow pear, mandarin and honeysuckle with touches of white strawberry
PALATE: A crisp and textural style Pinot Gris, exhibiting a creamy fusion of white & yellow fruits, gala red apple and white strawberry, with a firm, dry palate from light skin contact pre-crush and extended time on lees.
The 2017 vintage was a cooler season, however very good vintage for whites. For added complexity, 10% of the fruit for this wine was fermented 100% wild, with the remainder fermented using a particular yeast strain to accentuate floral and mineral tones. Following ferment, the wine was racked and briefly aged over light lees in stainless steel. Minimal fining only to retain maximum flavour and the pretty natural pink colour of the grape.
