COLOUR: Lime green with touches of medium straw.
NOSE: Ethereal whiffs of passion fruit flower and jasmine seductively dance with notes of pear and white peach aromas.
PALATE: Stylish ripe stone fruit flavours of nectarine and nashi fruit are wrapped in a sublime waxy texture enhanced by refined acidity.
WINEMAKING COMMENTS: The Vintage of 2019 delivered Fiano fruit reminiscent of the traditional climate conditions in Europe, cool yet warm enough to ripen the mid palate fruit structure. Simply crushed, pressed and racked after a period of 4 days to allow solids to settle on the base of the tank. Primary ferment conditions were enhanced by a controlled fermenting temperature of 15 o C and maintained unto completion after 9 days. Racked of heavy lees and allowed to flesh out with the suspended lees for a period of 2 weeks before settling at zero for 2 months prior to bottling.
FOOD MATCH SUGGESTION: Baked spatchcock with roasted walnuts, fetta cheese and balsamic vinegar.
