WINEMAKING COMMENTS: The 2019 Vintage delivered fruit in extraordinary conditions with full ripeness achieved at a lower alcohol level encompassing the cooler style. Crushed and pressed to tank with a cold settling period of 3 days prior to racking and starting the ferment with an aromatic yeast strain specializing in delivering fruit purity. Ferment phase lasted for 7 days resulting in racking to a clean tank off gross lees. Light lees contact for several weeks with the wine eventually filtered to bottle with a settling phase of 2 months.
FOOD MATCH SUGGESTION: Grilled sardines with Anchovy paste on a bed of steamed rice accompanied by a lime juice, pear and rocket salad.
