2014 Private Collection LM Reserve Assemblage

Description
REGION: Granite Belt, Queensland.
COLOUR: Deep plum red with hints of violet.
VARIETAL: Cabernet Sauvignon (47%), Merlot (34%), Petit Verdot (19%).
NOSE: Blackberry, blueberry and ripe mulberry with warm cinnamon and clove spices and roasted hazelnuts.
PALATE: An elegant, medium-bodied style with soft, dark berry fruits, black and red plum, cassis, warm clove and spice notes with hints of sweet tobacco and roasted walnuts. Soft, powdery tannins and supporting, charry oak provide excellent structure, while a refined line of acidity ensures length of flavour and texture on the back palate. Touches of violets and liquorice from cool-climate Cabernet enhance the velvet rich plum fruitcake of Merlot, with Petit Verdot offering firmer tannin backbone and excellent acidic balance.
WINEMAKING COMMENTS: Continuing the story that began back in 2008, when owner Mr Terry Morris asked our winemaker at the time (Adam Chapman) to create an elegant, super-premium Cabernet blend to honour his wife – “LM” being for Lurleen Morris. This is the third release of this wine, now a Sirromet flagship. 2014 was an outstanding vintage for the Granite Belt region, with a cool Spring followed by mild to warm dray weather through until late April, allowing late maturing Cabernet to achieve perfect ripeness. The three varietals were crafted separately with fermentation style and oak selection to suit each varietal. Much of the Cabernet in this wine underwent a complete wild fermentation, with the native yeast offering an extra dimension of flavour complexity unique to our vineyard and region. Merlot was cool fermented in a Ganimedes design fermenter with gentle maceration, followed by separation of the best pressings fractions to be reserved for this wine. Petit Verdot was aged in new American oak, while the Merlot and Cabernet matured in both new and older French barriques for 14 months. As is now our tradition, the selection of individual barrels for this blend and assessment of subsequent blend trials was done by our winemakers along with some invited guests, with much discussion (sometimes heated), but all were in agreement on the final blend.
FOOD MATCHING: Enjoy with slow-roasted lamb shoulder with a baked ratatouille and smoky eggplant jam.
