XXV by Sirromet
Description
REGION: Granite Belt, Queensland.
COLOUR: Pale lemon yellow with green hue.
TASTING NOTES: This field blend of Vermentino, Chardonnay and Fiano marries the unwooded Chardonnay style we’ve crafted since our first vintages, with vibrant new Italian varieties. Fresh and textural, with notes of lemon, white grapefruit, exotic white flowers and a creamy savouriness with touches of culinary herbs.
WINEMAKING COMMENTS: Beneath every vine lies a hidden story – a network of roots representing the moments, milestones and growth that have shaped Sirromet since 2000. This wine honours that journey, guided by unwavering passion and enduring values, as we continue to nurture a legacy for the years to come. When Risko (CEO) and Nadine (Director) asked Jess (Winemaker) to make a 25th Anniversary wine, the winemaking team knew it would be a white (as a red produced from 2025 vintage wouldn’t be ready in time) and wanted to revisit that early success story of unoaked Chardonnay, but combine it with the new direction we have moved into with the Italian white varietals that are in the granit range – so respecting the successes of Sirromet’s early days while weaving in the exciting new varietals and styles we are now creating, as Queenslanders’ wine palates have become more adventurous and curious.
So we have made a “field blend” (Vermentino, Chardonnay and Fiano crushed and co-fermented together) in the tradition of that unoaked white wine style, matured for a short time on fine yeast lees for extra texture, complexity and roundness on the palate and bottled early for freshness. It has great length and enough structure to allow for short-term ageing over the next 3-5 years, if desired. But it’s deliciously fresh right now also. It’s a great food wine (like most Italian white varieties and Chardonnay are).
FOOD MATCH SUGGESTION: Roast chicken with garlic and rosemary, served with seasonal greens.
